South Italian Cuisine
Southern Italian cuisine is popular with people from all backgrounds and ages because it is essentially food from the heart. Italian cuisine is characterised by its sophistication in its simplicity, with many dishes having only four to eight ingredients. Italian cooks rely chiefly on the quality of the ingredients rather than on elaborate preparation. This is one of the main reasons behind the ever increasing popularity of this cuisine. The style is more mediterranean and is almost a fusion between Greek and Spanish cooking.
Ingredients and dishes vary by regions. Many dishes that were once regional, however, have proliferated with variations throughout the country. Cheese and wine are a major part of the cuisine, with many variations and creations. Coffee, specifically espresso, has become important in Italian cuisine.
In a traditional Italian meal, the first to be served would always be an antipasto, a small dish to kickstart your taste buds. The next to be served would be the primo, which usually is a pasta or risotto, but could also be a gnocchi or a soup. Following this would be the secondo, which can be meat, seafood or a substantial vegetable dish or cheese dish. Dolce, or desserts, will be served last.
